- 3 garlic cloves
- 2 egg yolks
- salt
- 1 chili pepper
- 200 milliliters olive oil
- lemon juice
- cayenne pepper
- Pineapple sage (for garnish)
Preparation steps

Make sure all the ingredients are at room temperature. Mix the garlic, egg yolks, mustard, and pinch of salt, and the finely chopped chili. Whisk in a bowl until creamy. Add the oil gradually, starting with a few drop s at a time. Increase the flow to a thin stream and whisk until a thick mayonnaise forms.

Make sure the oil is incorporated before adding more. Season to taste with lemon juice, salt, and cayenne pepper. Garnish with the pineapple sage, and serve.
