- For the aioli
- 3 garlic cloves
- 2 egg yolks
- salt
- freshly ground peppers
- 200 milliliters olive oil
- 1 tsp lemon juice
- For the vegetables
- 16 mild Pepperoncini (red and green)
- 16 button Mushroom
- 8 Oyster mushrooms
- 8 Cherry tomatoes
- 4 Tbsps olive oil

Preparation steps

For the aioli: Peel the garlic and mince. Whisk in the egg yolks and season with salt and pepper. Slowly whisk in the olive oil in a thin, steady stream until thick and creamy. Stir in the lemon juice then cover and chill until ready to serve.

For the vegetables: Rinse the vegetables and pat dry. Halve the tomatoes. Season the vegetables with salt and pepper and brush with olive oil. Preheat a grill and oil the grates. Grill the vegetables on the grill (or in a grill pan) over medium heat for 8-10 minutes. Arrange on a serving plate and serve with aioli.
