600 grams small Zucchini
1 shallot
1 garlic clove
2 Tbsps olive oil
500 milliliters Vegetable broth
salt
freshly ground peppers
125 grams Whipped cream
125 grams Smoked salmon (sliced)

Preparation steps

1.

Rinse the zucchini and trim. Thinly slice 100 grams (approximately 3 ounces) and coarsely grate the rest. 

2.

Peel the shallot and garlic, chop finely and sweat in the oil until softened. Add the grated zucchini and sauté briefly. Pour in the broth, cover and simmer for about 20 minutes. Purée the soup, stir in the cream and season with salt and pepper.

3.

Blanch the zucchini slices in boiling salted water for 3 minutes. Shock in ice water then drain. 

4.

Cut the salmon into strips.

5.

To serve: Spoon the soup into warm serving bowls and garnish with smoked salmon and zucchini slices.
