500 milliliters Vegetable broth

125 grams Smoked salmon (in slices)

Preparation steps

1.

Rinse, trim and coarsely grate zucchini.

Peel and finely chop shallots and garlic. In a pan, cook shallots and garlic in hot oil until translucent. Add zucchini and cook briefly. Add broth, cover, and simmer about 20 minutes. Puree soup, season with salt and pepper, stir in cream and season to taste.

Cut smoked salmon into strips.

4.

To serve, divide soup among warmed bowls and garnish with smoked salmon. Garnish with chives, if desired.
