750 grams potatoes (cooked)

4 Tbsps Pastry flour

Preparation steps

Rinse, trim and coarsely grate zucchini. Rinse mint, shake dry and finely chop. Peel potatoes and press through a potato ricer into a bowl. Add eggs, mint, flour and zucchini and knead until well mixed. Season with salt, pepper and nutmeg. Divide mixture into 16 portions. With wet hands, form into patties.

Heat oil in a large pan over medium heat. In batches of 4, cook zucchini patties until golden, 3-5 minutes per side. Keep patties warm in the oven at 100°C (approximately 200°F) until ready to serve, or serve cold.
