300 grams Couscous (instant)
400 milliliters Vegetable broth
2 Zucchini
400 grams Peas (frozen)
2 Tbsps olive oil
1 handful Basil
200 grams Feta
1 organic lemon (zested and juiced)
salt
freshly ground peppers

Preparation steps

1.

Place the couscous in a bowl, pour in the boiling broth and leave to soak for about 10 minutes.

2.

Rinse, trim and slice the zucchini. Thaw the peas.

Sweat both together in some oil for 4-5 minutes over low heat. Then mix into the couscous.

3.

Rinse the basil, shake dry and cut the leaves into strips. Add to the couscous salad along with the crumbled feta and the lemon zest.

Mix everything together and serve seasoned with lemon juice, salt and pepper.
