1 cup Wild rice
3 Tbsps vegetable oil
2 rashers fatty Bacon (streaky, American)
1 onion (finely chopped)
1 Apple (cored and chopped)
2 Tbsps chopped Sage
1 egg (beaten)

Preparation steps

Cook the rice according to the packet instructions. Heat the oven to 200ºC (180º fan) 400ºF, gas 6.

While the rice is cooking, heat the oil and cook the bacon until the fat starts to run. Add the onion and gently cook until the onion is soft but not brown. Add the apple and sage and continue cooking for five minutes, stirring from time to time.

Season with salt and pepper then add to the cooked rice. Gently mix in the beaten egg and shape the mixture into balls. Place in an ovenproof dish and bake in the oven for 15 - 20 minutes.
