Preparation steps

1.

Blanch the tomatoes in boiling water. Remove from the hot water, peel, quarter, remove the core, and finely dice. Peel and finely dice the shallots. Rinse, trim, and julienne the wild garlic.

2.

Mix the vinegar, lemon juice, broth, sugar, and oil. Season to taste with salt and pepper. Add the tomatoes and wild garlic, and serve.
