Preparation steps

Peel and finely dice the shallot and garlic. Rinse the parsley, pat dry, and finely chop.

Mix the shallot, garlic, and the parsley with the vinegar. Gradually incorporate the oil, whisking constantly, until combined completely. Season to taste with salt and pepper.

This dressing goes great used for something like a potato salad.
