- 4 Tbsps Peanut oil
- 8 Whole-wheat tortillas
- 150 grams Cheese (strong Gouda cheese or raclette)
- 150 grams cooked ham
- 4 Tomatoes
- 1 shallot
- 2 Tbsps parsley (chopped)
- lemon juice
- salt
- freshly ground peppers

Preparation steps
1.
Rinse the tomatoes, cut into quarters, remove the seeds, and dice.

Peel and finely chop the shallots. Mix with the parsley and tomato, then season to taste with lemon juice, salt, and pepper.

Divide the ham and cheese onto 4 tortillas. Top with the tomato mixture, then top with the remaining tortillas. Add to a hot pan with a little oil, and cook for 1-2 minutes until golden brown. Flip and cook until golden brown. Remove from the pan, and repeat the process with the remaining quesadillas. Cut the quesadillas into pieces, and serve.
