1 packet Vanilla sugar
4 medium eggs
4 Tbsps sugar
100 milliliters white wine
Lemon balm (for garnish)

Preparation steps

1.

Rinse the berries and pat dry. Toss with the vanilla sugar and set aside to macerate.

Whisk the eggs, sugar and white wine in a metal bowl until combined. Set over a hot water bath and whisk until light and foamy.
