Even smarter

The low-fat quark conjures up a rich portion of high-quality protein in this dessert. Even better: the body building material from the quark, together with the proteins from the egg, is of very high quality and can be easily absorbed. Lemon juice provides immune-strengthening vitamin C.

If you do not want to use gelatine, the mousse can alternatively be prepared with agar-agar. Make sure that the manufacturer's instructions are correct. Depending on the season, you can also combine other berries or fruits with the quark mousse. How about strawberry and rhubarb, for example?

60 grams powdered sugar
200 grams Quark
150 milliliters Whipped cream
250 grams mixed, fresh Berry (such as raspberries and blueberries)
4 mint
powdered sugar (for dusting)

Preparation steps

Soften the gelatin in cold water. Separate the eggs and beat the egg yolks with the halved vanilla bean, lemon juice and powdered sugar over a hot water bath until creamy. Stir in the squeezed gelatin until melted. Remove from the heat, beat until cold over an ice bath and then remove the vanilla bean and mix in the quark. Whip the cream until stiff and then fold in. Whip the egg whites until stiff and fold into the mousse. Pour into a bowl, cover and chill for at least 3 hours. Rinse the berries and pat dry. Scoop the mousse into quenelles and place in serving bowls. Garnish with the berries and mint and serve dusted with powdered sugar.
