White Chocolate Ice Cream
Chop the white chocolate coarsely and melt over a hot water bath. Combine the yolks, egg, sugar, vanilla sugar and rum on the hot water bath, also until creamy. Stir in the melted chocolate and the cream cheese, then remove from heat.
Fold in the cream and beat until stiff. Scrape into a shallow dish and freeze at least 3 hours (or finish in an ice cream machine). Stir vigorously every 20 minutes.
