8 ozs dairy-free white chocolate (baking)
½ cup dairy-free margarine
2 eggs
0.333 cup sugar
1 tsp vanilla extract
1 ¼ cups self-rising flour
1 pinch salt

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Lightly grease a 23cm|9" square baking tin.
2.
Melt the chocolate and margarine in a heatproof bowl over a pan of simmering (not boiling) water. Remove from the heat and set aside.
3.
Whisk the eggs in a mixing bowl until foamy, then gradually whisk in the sugar and vanilla.
4.
Gradually whisk in the chocolate mixture until well mixed.
5.
Sift in the flour and salt and gently stir into the mixture until blended.
6.
Spoon into the tin and smooth the top. Bake for about 25 minutes until just set and still a little soft in the centre. A skewer inserted in the middle should come out with a few crumbs, but not be wet. Cool in the tin and cut into squares.
