For the asparagus
2 kilograms Asparagus
salt
2 tsps butter
For the hollandaise sauce
250 grams butter
2 egg yolks
4 Tbsps white wine
2 Tbsps lemon juice
salt
white peppers (freshly ground)

Preparation steps

For the asparagus: Peel asparagus well, cut off woody ends and cook in boiling salted water with added butter for about 18 minutes. Remove with a slotted spoon and drain well. Serve immediately with hollandaise sauce.

For the hollandaise sauce: Melt butter and skim off any foam. Combine egg yolks and wine in a metal bowl and beat over hot water bath until frothy. Gradually add butter, whisking constantly, until creamy and thick. Season with lemon juice, salt and pepper.
