- 1 cup Corn starch
- ¾ cup powdered sugar
- ½ cup all-purpose flour
- ½ cup ground Walnut
- 1 pinch salt
- ¾ cup unsalted butter
- ½ tsp vanilla extract
- 6 Tbsps seedless Raspberry jam
Preparation steps
1.
Line 2 baking trays with non-stick baking paper.

Sift together the cornflour, icing sugar and flour. Stir in the ground walnuts and salt. Set aside.
3.
Beat together the butter and vanilla in a mixing bowl until fluffy.
4.
Gradually beat in the flour mixture, beating well.
5.
Spoon into a piping bag with a star or shell nozzle.
6.
Pipe 4cm| 1 1/2" diameter circles on the baking trays, making the edges higher than the base and 5cm| 2" apart. Chill for 30 minutes.
7.
Heat the oven to 180°C (160° fan) 350°F gas 4.
8.
Bake for 10-12 minutes, until the edges are golden. Cool completely on the trays.
9.
Place about a teaspoonful of jam in the centre of each cookie.
