- 4 egg whites
- 1 cup caster sugar
- 1 tsp Corn starch
- 1 Tbsp cocoa powder
Preparation steps

Heat the oven to 150°C (130° fan) 300°F gas 2. Line 2 large baking trays with non-stick baking paper.

Put the egg whites and sugar in a heatproof bowl over a pan of simmering (not boiling) water. Stir until the sugar has completely dissolved and the mixture is hot to the touch. Remove from the heat.

Whisk the egg white mixture is until very thick and glossy. Sift in the cornflour and stir until blended.

Sift in the cocoa powder and gently fold into the mixture, stirring just 2-3 times until marbled through.
5.
Spoon into a piping bag and pipe rounds onto the baking tray. Put into the oven and immediately reduce the oven temperature to 120°C (100° fan) 250°F gas 1/2. Cook for 1-1 1/4 hours. Turn the oven off and leave to dry out in the oven until cold.
