For the caterpillars
16 very small potatoes

300 grams Quark
3 Tbsps Yogurt (0.1% fat)
4 Tbsps freshly chopped Fresh herbs (Chives and parsley)

Preparation steps

For the caterpillars: peel the potatoes, wash and cook for 10-15 minutes in a pan of boiling salted water, until tender. Drain. Rinse the tomatoes and do not remove the tomato stems. Heat the sausages in boiling water.

For the quark dip: Trim and rinse the radish and cut into very small cubes. Peel the shallot and also chop very finely. Blend both until smooth with the quark, the yogurt and the herbs and season with salt, pepper and lemon juice.

To assemble the caterpillars, thread onto each wooden skewer: a tomato for the head, 4 potatoes for the body and a sausage for the tail. Use mayonnaise to paint the face and decorate the back. Serve the finished caterpillar with quark dip and if desired, with fresh corn salad.
