4 boneless, skinless Chicken breasts (halves)
salt (to taste)
freshly ground Black pepper (to taste)
1 Tbsp Oil
1 clove garlic cloves (crushed)
1 pc freshly grated ginger peeled and grated (about 1-inch)
2 large carrots (peeled and cut into thin strips)
2 Tbsps water
1 bunch scallions (cleaned and cut into thin strips)
1 bunch Bok Choy (cleaned and shredded)
12 ozs cellophane noodle (or rice noodles)
3 Tbsps soy sauce
1 Tbsp honey
2 Tbsps fresh Lime juice

Preparation steps

Rinse the chicken under cold running water and pat completely dry with paper towels. Season to taste with salt and pepper. Cut the chicken breasts into thin strips and place in a bowl with the oil, garlic and ginger. Toss to mix and set aside.

Heat a large wok or frying pan until very hot. Add the chicken and the contents of the bowl and stir-fry for 2 minutes. Add the carrots and water. Cover and steam-fry for 5 minutes until the chicken is cooked. In a small bowl, combine the soy sauce, honey and lime juice; add the soy sauce mixture, spring onions and boy choy for the last 2 to 3 minutes.

Meanwhile, prepare the noodles according to package instructions.

Drain the noodles thoroughly. Divide hot noodles between warm serving bowls and top with chicken and vegetable mixture. Serve immediately.
