- 3 cups carrots (peeled and sliced)
- 1 clove garlic cloves (peeled)
- ½ tsp ground Cumin
- ½ tsp ground ginger
- ½ tsp ground cinnamon
- ½ tsp paprika
- ¼ tsp cayenne pepper
- Sea salt (to taste)
- 2 Tbsps lemon juice
- 1 Tbsp honey
- 2 ½ Tbsps olive oil (plus extra for drizzling)
- assorted, fresh Vegetables to serve (such as broccoli, baby carrots, green onion, celery, etc. )
Preparation steps

Bring a large saucepan of salted water to a boil. Add the carrots and garlic clove. Cook over medium-high heat for about 20 minutes, or until carrots are tender.

Drain thoroughly; return carrots to the hot pan to dry out further.

Place the carrots and garlic into the bowl of a food processor; pulse until mixture is smooth. Add the spices, lemon juice and honey, pulse once or twice to blend. With the food processor still running, slowly add in the olive oil.
4.
Allow mixture to cool. Spoon dip into a serving bowl. Drizzle lightly with olive oil if desired. Serve with assorted fresh vegetables.
