2 Tbsps light soy sauce
1 Tbsp apple cider vinegar
4 Tbsps vegetable oil
250 grams cooked Brown rice
2 stalks Celery
2 carrots
80 grams Cashews
200 grams Whipped cream
1 Tbsp Curry
½ bunch parsley

Preparation steps

For the fried rice: In a bowl, whisk the soy sauce with the apple cider vinegar, and season with salt and pepper to taste. Drain the tofu thoroughly, pat dry and chop. Place in the soy mixture and marinate for 30 minutes. Rinse and slice the celery. Rinse, peel and slice the carrots. Cook the rice according to the package instructions.

Drain the tofu. Heat the oil in a skillet. Add the tofu and cook until golden, about 5 minutes. Remove and drain on paper towels.

Add the celery, carrots and cashews to the skillet, and cook for 5 minutes. Stir in the rice along with the cream and curry, and season with salt and pepper to taste. Cook, while stirring, for 2 minutes. Rinse the parsley, shake dry and chop.

For serving: Serve the fried rice garnished with the fried tofu and parsley.
