- 1 yellow onion
- ½ Lettuce
- 2 potatoes
- 3 carrots
- 3 Tomatoes
- 5 sheets Swiss chard
- 2 stalks Celery
- 200 grams Peas
- 5 Tbsps olive oil
- 2 liters Vegetable broth (from the jar)
- 1 bunch parsley
- 2 garlic cloves
- 6 slices white bread
- 100 grams grated Parmesan
Preparation steps

Peel the onion and cut into thin rings. Rinse the lettuce and cut into strips. Peel and dice the potatoes. Rinse the chard, remove the stem and cut into strips. Rinse the celery and cut into thick rings. Rinse and slice the carrots. Blanch, rinse, peel and quarter the tomatoes.

Rinse and finely chop the parsley.
Heat the olive oil, sauté the onions and then add all the vegetables. Sauté for 5 minutes and then pour in the vegetable broth. Cover and simmer for 1 hour over low heat.
Peel and halve the garlic cloves. Slice the bread and rub with the garlic. Cook under the broiler at 200ºC (approximately 400ºF) for 5 minutes.
Transfer the soup to bowls and serve with slices of garlic bread.
