Preparation steps

1.

Divide the sushi rice into 16 portions. With moistened hands, shape each portion of rice into a 5-6 cm long Nigiri (roll-shapes). Cut the shrimp on the underside in half but not all the way through, unfold apart slightly, spread with 1/3 of wasabi paste and place on 4 rice rolls. Brush the salmon with 1/3 of wasabi paste and place on 4 rice rolls.

2.

Brush the tuna with 1/3 of wasabi paste and place on 4 rice rolls. Wrap the each of the remaining rice rolls with a strip of nori, so the top is approximately 5 mm (approximately 1/4 inch) above the rice. Press the nori into the rice to adhere. Spoon the caviar into the holes of the nori rolls. Divide rolls 2 pieces of each type per person and serve with wasabi, pickled ginger and cucumber slices.
