4 Tbsps Strawberry syrup
4 Tbsps lemon juice
1 Vanilla bean
500 grams Quark
2 Tbsps powdered sugar (20 g)
150 grams Yogurt (low-fat)
2 stalks mint

Preparation steps

1.

For the granita, rinse and core strawberries. Mix with strawberry syrup and 2 tablespoons of lemon juice in a blender until fine. Place mixture into a shallow metal bowl and freeze for about 1 hour.

After one hour, stir granita mixture well with a fork and chill 1 additional hour.

Meanwhile, for the cream, halve vanilla bean lengthwise and scrape out seeds with a sharp knife. Mix with Quark, remaining lemon juice and powdered sugar. Fold in the yogurt (low-fat).

4.

Rinse mint and shake dry. Pluck leaves.

5.

Distribute vanilla cream into 4 glasses. Top with strawberry granita and garnish with mint leaves.
