Preparation steps

1.

Rinse and pat dry strawberries. Halve 2 strawberries and set aside, Rinse the rest and cut into bite-sized pieces.

Run lime under hot water, pat dry, remove half of the zest and set aside. Finely grate remaining zest  and then squeeze juice. Combine lime juice with honey and strawberries and let stand for about 10 minutes.

Meanwhile, split vanilla bean lengthwise and scrape out seeds. Stir together quark, sugar, vanilla and lime zest until smooth. Fold in yogurt.

4.

Divide half the strawberries among 4 glasses, then top with half of the cream. Crumble ladyfingers coarsely and sprinkle into each glass. Layer with remaining strawberries, then cream.

5.

Garnish with strawberry halves and lime zest and refrigerate for about 1 hour before serving.
