1 cup caster sugar
½ cup unsalted butter
4 ripe Quince (peeled and quartered)
12 ozs Puff pastry

1 Large knife, 1 Cutting board, 1 Wooden spoon, 1 Pot, 1 Teaspoon, 1 Measuring cups, 1 Grill pan, 1 Slotted spatula, 1 Plastic wrap

Preparation steps

Heat the butter and sugar in an ovenproof frying pan until melted, stirring occasionally.

Remove the pan from the heat and arrange the quinces in the pan, fitting them together tightly. Return the pan to the heat and bring to a boil.
3.
Cook slowly for 20-40 minutes, depending on the ripeness of the fruit, until the mixture becomes caramel coloured. Remove from the heat and leave to cool.

Heat the oven to 220°C (200° fan) 425°F gas 7.

Roll out the pastry 5 cm|2"larger than the pan and place it carefully over the quinces, pressing the sides to the edges of the pan.
6.
Bake for 20-25 minutes until the pastry is golden. Remove from the oven and leave to cool for 10 minutes. Run a knife around the edge of the pastry. Place a serving plate over the pan and invert onto the plate.
