600 grams Greek Yogurt (0.1% fat)
2 small Cucumber
3 garlic cloves
1 Tbsp White vinegar
2 Tbsps olive oil
salt
1 Tbsp scallions

Preparation steps

Peel and halve the cucumbers. Scrape out the seeds and coarsely grate. Mix with 1 teaspoon of salt, set aside, and let stand for 10 minutes. Rinse the cucumber, drain thoroughly, and mix with the yogurt. Peel the yogurt and pass through a press into the yogurt mixture. Mix in the olive oil and vinegar, season to taste with salt, and let infuse shortly before serving.

Serve the tzatziki garnished with a slice of tomato and the scallions.
