4 large, baking potatoes
1 Tbsp Oil
2 mixed Fresh herbs e. g. chives, parsley, tarragon, basil, thyme, coriander (cilantro)
1 red chili pepper (seeds removed and finely chopped)
1 small lemon (juice)
1 cup butter
salt
freshly ground Black pepper
To garnish
cilantro
toasted Pumpkin seed
Chives

Preparation steps

Heat the oven to 400°F.

Prick the potatoes several times with a fork. Rub the oil over the potatoes, then wrap each potato in foil. Place directly on the shelf in the oven and bake for 1 1/4-1 1/2 hours, (depending on the size of the potato) until soft on the inside.

Place the herbs in a food processor with the lemon juice and butter and blend until combined. Put into a bowl and stir in the chopped chilies. Season to taste with salt and pepper.

Split open the potatoes and divide the herb butter evenly between them. Garnish with coriander, pumpkin seeds and chives.
