600 grams turkey breasts
2 Red Bell pepper
4 scallions
1 garlic clove
1 tsp ginger (freshly grated)
1 chili pepper
4 centimeters Lemongrass
2 Tbsps vegetable oil
1 Tbsp Red Curry paste
200 milliliters Coconut milk
200 milliliters Chicken broth
soy sauce
cayenne pepper

Preparation steps

1.

Rinse turkey breast, pat dry and cut into strips.

2.

Rinse peppers, cut in half, remove seeds and also cut into strips.

3.

Trim scallions, rinse and cut diagonally in 4 cm (approximately 1 1/2 inches) long pieces.

Peel garlic and chop finely.

5.

Rinse chile, cut in half lengthwise, remove seeds and finely chop.

Sweat garlic, ginger, lemongrass and chile briefly in hot oil. Add curry paste and mix in turkey meat. Sweat together, deglaze with coconut milk, allow to simmer then pour in broth. Add peppers and scallions and leave to stew about 2 minutes.

7.

Pluck basil leaves and chop up some leaves for garnish. Add remaining basil to the curry and season with soy sauce and cayenne pepper. Serve garnished with basil leaves. Serve with rice as desired.
