Preparation steps

Rinse the summer squash, trim, cut 1 summer squash into long slices, and grate the remaining coarsely. Peel, rinse and grate the sweet potatoes coarsely. Peel the onions, cut into thin strips and mix with the grated summer squash, sweet potatoes, egg, parsley, flour and cornstarch. Season with salt, pepper and nutmeg. Form patties out of the mixturea and fry in a hot pan with 2 tablespoons oil until golden brown on both sides.

Remove the patties from pan, drain on kitchen paper and keep warm in a preheated oven at 100°C (fan: 80°C, gas mark 1) (approximately 210°F).

Rinse the turkey cutlets, pat dry, knock down flat and cut into halves. Season with salt and pepper. Put 1 half turkey cutlet over each summer squash slice and roll up. Thread 2 turkey rolls with 1 patty on a wooden skewer. Fry the skewers in another pan with the oil from all sides until brown. Arrange the turkey rolls with patties on plates. Serve with fresh cream cheese.
