Preparation steps

Soak apricots 2 hours in warm water, drain and dice finely. Toast almonds golden brown in a dry frying pan. Pound turkey somewhat flatter. Season with salt and cayenne pepper. Distribute apricots and almonds on meat, roll up and secure with wooden skewers.

Heat oil in a frying pan and cook the rolls just until golden brown on all sides. Pour in broth, stir in saffron, cover and cook over low heat for about 20 minutes until done, turning occasionally. Remove the rolls and keep covered and warm. Add the tomatoes for sauce and boil down while slightly stirring. Season with salt and cayenne pepper.

To serve, arrange turkey rolls with sauce on warmed plates.
