- 8 small Turkey cutlets
- 2 tsps medium hot Mustard
- 8 slices Serrano ham
- 8 dried Apricot
- 1 Tbsp olive oil
- salt
- freshly ground peppers
- 8 Roulade pins

Preparation steps
1.
Rinse turkey cutlets, pat dry and flatten, if necessary. Season with salt and pepper. Spread with mustard on one side and top each cutlet with slice of ham and an apricot.
2.
Roll up cutlets and thread on skewers. Brush with olive oil and grill on a hot grill for about 10 minutes, turning often. Arrange on plates and serve.
