- 2 Turkey thighs (each 500 grams)
- 2 onions
- 2 garlic cloves
- 1 Red Bell pepper
- 1 yellow Bell pepper
- 2 small Zucchini
- 1 small Eggplant
- 2 Tomatoes
- 4 Tbsps olive oil
- 1 tsp rosemary (chopped)
- 1 tsp thyme (chopped)
- 125 milliliters dry white wine
- 2 Tbsps Basil (finely chopped)
- salt
- freshly ground peppers
Preparation steps
1.
Season the turkey legs with salt and pepper.
2.
Peel and finely chop onion and garlic.
3.
Rinse and cube zucchini and eggplant.
4.
Rinse peppers, remove seeds and cube.
5.
Blanch the tomatoes, peel, remove seeds and cube.
6.
Sautée turkey legs with oil in a casserole dish. Add rosemary and thyme, pour in wine. cover and bake in a preheated oven at 180°C (approximately 350°F) for 45 minutes.
7.
Add vegetables, mix with the meat juices and cook, covered, for another 40 minutes.
8.
Mix in the basil. Serve the turkey legs with the vegetables.
