- For the turkey
- 4 boneless, skinless turkey breasts
- olive oil
- 2 Tbsps black peppercorns (crushed)
- salt
- For the salsa
- 6 ripe Tomatoes (chopped)
- 1 Red onion (finely diced)
- 4 ½ ozs black Olives (pitted and chopped)
- 1 Tbsp chopped Basil
- 2 cloves garlic cloves (finely chopped)

1 Pot, 1 Measuring cups, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Wooden spoon, 1 Peeler, 1 Lid
Preparation steps

Lightly brush the turkey breast with olive oil. Sprinkle with the peppercorns and salt, pressing the peppercorns into the meat. Leave to stand for 20 minutes.

Heat the grill to high.

Grill the turkey breasts for 8-10 minutes, turning once during cooking, until cooked through. To test if the turkey is cooked -insert a skewer or knife into the meat - the juices should run clear with no trace of pink.
4.
For the salsa: stir together the tomatoes, onion, olives, basil and garlic. Season to taste with salt and pepper.
5.
Divide the salsa between 4 serving plates and place the turkey breasts on top. Garnish with basil.
