3 skinless, boneless turkey breasts
salt
freshly ground Black pepper
3 Tbsps sunflower oil
4 rashers Bacon (diced)
2 onions (chopped)
1 red Bell pepper (seeds removed, sliced)
2 cups canned, chopped Tomatoes
2 ½ cups chicken stock
1 bay leaf
2 tsps dried thyme
1 ¾ cups Green beans (chopped)
1 ¼ cups canned Sweet corn (drained)
1 Tbsp Corn starch
2 Tbsps cold water
For the topping
1 large egg
½ cup milk
4 Tbsps melted butter
1 cup gluten-free all purpose flour
1 cup Cornmeal
2 tsps gluten-free Baking powder
¼ tsp salt

Preparation steps

1.
Season the turkey breasts with salt and pepper.
2.
Heat the oil in a large frying pan and cook the turkey breasts until lightly browned all over. Cut into small pieces and place in a large baking dish.

Heat the oven to 200°C (180° fan) 400°F gas 6.

Put the bacon, onion and chopped pepper in the same frying pan used to brown the turkey and fry for 4-5 minutes until lightly browned, stirring.

Stir in the tomatoes, stock, bay leaf, thyme and green beans. Bring to a simmer and cook gently for 3-4 minutes.

Put into the baking dish. Cover and cook in the oven for 30 minutes.
7.
Mix the cornflour and water and stir into the turkey mixture with the sweetcorn.
8.
For the topping: whisk together the egg, milk and melted butter in a mixing bowl.
9.
Mix together the flour, cornmeal, baking powder and salt and stir into the egg mixture until well blended. Drop spoonfuls of the dough all over the hot filling.
10.
Bake for about 30 minutes, until the topping is browned and the filling is bubbling.
