2 tablespoons olive oil
1 medium onion (finely diced)
2.333 cups zucchini (washed and sliced)
1 teaspoon chopped Dill
salt

1 cup single cream
3 eggs
2 tablespoons plain flour
2 cups Mozzarella (shredded)

Preparation steps

1.
Preheat the oven to 200°C | 400F | gas 6.

Heat the oil in a shallow ovenproof dish, when hot add the diced onions and sliced courgettes. Bake for 5–8 Minutes until soft.

Add the chopped dill and stir to combine.
4.
In a bowl beat the cream, eggs, flour, salt and pepper until smooth. Add the grated mozzarella cheese.
5.
Pour the batter over the onions and courgettes. Reduce the oven temperature to 180°C | 350F | gas 4.
6.
Bake for 25 Minutes until well risen and golden brown. Serve immediately.
