300 grams Pastry flour
1 pinch salt
1 egg
200 grams butter
½ bunch thyme

1 egg yolk

Preparation steps

Mix the flour and salt together. Make a mound on the table. Make a well in the cetner and add the egg. Chop the butter into small pieces and distribute around the mound. gradually incorporate the egg into the flour, starting in the center and working your way out. Knead by hand to process a smooth dough. Form into a ball, wrap in plastic, and chill for 30 minutes.

Preheat the oven to 180°C (approximately 350°F). Rinse the thyme, pat dry and pluck off the leaves. Roll out the dough on a floured surface, cut out different shapes and place on a parchment-lined baking sheet.

Brush with a beaten egg yolk and sprinkle with seas salt, caraway, and thyme leaves. Bake for 10-12 minutes in the oven.

To serve, remove from oven and let cool. Serve cooled.
