- 2 onions (chopped)
- 1 ⅔ cups self-rising flour (sifted)
- 2 tsps mustard powder
- ⅓ cup butter (chopped)
- 4 cups mature Cheddar cheese (grated)
- ⅔ cup milk
- 1 egg (beaten)

Preparation steps
1.
Heat the oven to 180ºC (160º fan) 350ºF, gas mark 4. Heat the oil in a pan and gently fry the onions until soft but not brown. Remove the pan from the heat and set aside.

Place the flour and mustard powder in a large bowl and rub in the butter until the mixture resembles breadcrumbs. Season with salt and pepper and mix in three quarters of the cheese along with the cooked onion.
3.
Gradually add the milk until you have a soft dough then turn it onto a floured board and shape it into a large scone. Place the scone on a greased baking sheet, brush the top with the beaten egg and scatter over the remaining cheese.
4.
Bake in the oven for 15 - 20 minutes or until the top is golden-brown.
