- 300 grams Tuna (thinly sliced)
- 2 organic Oranges
- 2 Tbsps Orange liqueur
- 2 Tbsps lemon juice
- 1 Tbsp honey
- 8 thyme
- 2 Tbsps vegetable oil
- Sea salt
- freshly ground peppers

Preparation steps
1.
Grate zest of an orange and blanch in hot water. Fillet two oranges and collect all resulting juice (squeeze juice from remaining pulp).
2.
Heat oil in a pan and sear tuna on both sides. Remove from heat and arrange on warmed plates.
3.
Add honey to the pan and deglaze with liqueur. Add thyme sprigs, orange and lemon juice and simmer down briefly. Season with salt and pepper, add orange fillets and zest and heat through. Drizzle tuna with orange sauce and season with sea salt. Serve immediately.
