150 grams Rice noodles
½ Cucumber
½ Red Bell pepper
1 large carrot
60 grams Lettuce (such as romaine)
200 grams Tuna (canned)
4 sheets Rice paper (each around 22 cm) (approximately 8 inches)

Preparation steps

1.

Cook the rice noodles according to package directions, drain in a colander, rinse under cold water until cool and drain again. Cut into small pieces with scissors.

Peel the cucumber and julienne. Rinse the pepper, remove the stem, seeds and pith and cut into long strips. Peel the carrot and cut lengthwise into thin strips with a vegetable peeler. Rinse the lettuce, shake dry and cut into wide strips. Drain the tuna and flake.

3.

Working with 1 piece of rice paper at a time, dip in water until softened, spread out over a clean cloth, arrange the prepared ingredients in the center and roll up like a burrito.

4.

To serve, cut the summer rolls into bite-sized pieces and serve with soy sauce for dipping, if desired.
