125 grams Glass noodles
½ small onion
50 grams Arugula
½ Lime
300 grams very fresh Tuna steak
2 tsps black Sesame seeds
2 Tbsps butter
6 Tbsps soy sauce
1 Tbsp Oyster sauce
1 centimeter ginger (finely grated)
1 pinch sugar
1 tsp Rice vinegar

Preparation steps

1.

Soak glass noodles in lukewarm water. Peel onion, halve and cut lengthwise into thin rings. Heat 1 tablespoon of butter in a pan and saute onion until soft. Drain noodles and cut into smaller pieces with scissors. Cook according to package instructions in salted water. Drain, rinse with cold water and drain again. Heat remaining butter in a pan, add soy and oyster sauces, boil down briefly, add ginger and rice vinegar. Season with a little sugar.

Cut tuna into 6 equal slices. Arrange glass noodles with onions on two plates, drizzle with prepared sauce. Top with arugula and decoratively arrange tuna on top. Sprinkle with sesame seeds and garnish with lime wedges.
