- 1 ¾ cups french Beans
- 1 Fennel bulb (thinly sliced)
- 1 Red onion (thinly sliced)
- 4 Smoked trout (flaked)
- 2 Tbsps Caper
- 2 sprigs Dill (chopped)
- 3 Tbsps olive oil
- 1 Tbsp white wine vinegar
- 2 tsps Wholegrain Mustard

Preparation steps
1.
Cut the tops off the beans and plunge them into boiling water for 2 minutes. Drain, refresh under cold running water and gently pat dry with kitchen paper.
2.
Put the fennel and onion into a bowl and add the smoked trout, capers and dill.
3.
Mix the oil, vinegar and mustard in a small bowl, season to taste with salt and pepper and dress the salad. Serve immediately.
