- 2 Oranges (squeezed)
- 1 lemon (squeezed)
- ⅞ cup Plum wine
- 1 fresh Pineapple
- 4 ripe Tomatoes
- 2 red chili peppers
- 1 oz ginger
- 3 Tbsps Corn starch
- salt
- cayenne pepper
- Rice vinegar (for seasoning)
- 1 sprig Thai basil (chopped)
Preparation steps

Mix the cornflour smoothly in a little cold water. Peel the pineapple with a sharp knife. Then halve lengthwise, cut out the core and dice 3/4 of the pineapple. Finely puree the rest and put into a small pan with the orange juice and wine. Bring to the boil, then stir in the mixed cornflour and cook until it thickens. Add the finely chopped chillies and ginger. Drop the tomatoes into boiling water for a few seconds, then skin, halve, deseed and dice. Stir into the hot mixture with the diced pineapple, then set aside and leave to cool.

Season with salt, a pinch of cayenne pepper and rice vinegar to taste. Mix in the basil and serve.
