- 1 Tbsp olive oil
- 1 red chili pepper (seeded and finely diced)
- 2 cups canned, cubed Pineapple (in juice)
- 2 Mangoes (pitted and finely diced)
- 1 Lime (juiced)
- ⅓ cup distilled vinegar
- 2 Tbsps caster sugar
- cilantro (finely chopped)
- salt
- freshly ground Black pepper

Preparation steps
1.
Combine all the ingredients apart from the coriander in a slow cooker.
2.
Cover the cooked with a lid and cook on low for 6 hours, stirring from time to time.
3.
Stir in the coriander and adjust the seasoning to taste.
4.
Spoon into a large jar, leave to cool, and seal well. Chill before serving.
