3 Tbsps olive oil
2 onions (finely chopped)
1 tsp Mustard seed (toasted)
½ tsp ground Turmeric
½ tsp ground ginger
1 clove garlic cloves (finely chopped)
1 red chili pepper (seeds removed, chopped)
1 Pineapple (peeled, cored and cut into chunks)
1 sprig rosemary
1 Tbsp honey
cup Cider vinegar
½ cup light brown sugar
salt

Preparation steps

1.
Heat the oil in a frying pan and cook the onions over a low heat until softened.
2.
Add the mustard seeds, spices, garlic and chilli and cook for 2 minutes.
3.
Put into a large heavy-based pan and add the remaining ingredients. Stir over a low heat until the sugar has dissolved, then reduce the heat and simmer for 40-60 minutes until thick. Remove the rosemary. Seasoon to taste with salt and pepper.
4.
Spoon into hot sterilised jars. Cover, seal and label.
