- 220 grams mixed Ground meat
- 1 Tbsp olive oil
- 50 grams Leeks
- ½ Red Pepperoncini
- salt
- freshly ground peppers
- 1 Tbsp Tomato paste
- 200 milliliters Vegetable broth
- 2 Whole-wheat tortillas
- 2 Tbsps green Olives (stuffed with red peppers)

Preparation steps
1.
Rinse leeks, trim and cut into thin strips about 5 cm (approximately 2 inches) long.
2.
Cut peperoncini in half, remove seeds and ribs and cut into fine strips.
3.
Heat oil in a pan and fry ground meat until brown and crumbly. Add leeks and peperoncini and fry briefly while stirring.
4.
Mix tomato paste in a bowl with broth, add to the pan, mix, bring to a boil, simmer over high heat until liquid is almost evaporated and season with salt and pepper.
5.
Warm tortillas in a preheated oven for a few minutes.
6.
Cut olives into thin rings. Cut feta cheese into thin slices.
7.
Place tortillas on a work surface, sprinkle each with ground meat, olives, feta cheese and dill. Fold our roll tortillas around the filling and serve immediately.
