1 red chili pepper
250 grams Chorizo
400 grams Tortellini (refrigerated)

2 Tbsps olive oil
250 grams Peas (frozen)
8 eggs
100 grams grated Cheese (such as Manchego)
freshly ground peppers
2 Tbsps freshly chopped parsley

Preparation steps

Preheat oven to 200°C (approximately 400°F).

Peel onion and garlic and finely chop. Rinse red chili pepper, cut in half lengthwise, remove seeds and white ribs and chop. Peel sausage and cut into slices.

Cook tortellini in salted boiling water for about 4 minutes, then rinse and drain.

Heat oil in a large ovenproof frying pan (use two pans if necessary). Quickly fry onion, garlic and chili pepper. Add chorizo, peas and tortillini. Beat eggs with the cheese, salt and pepper and pour evenly over by pivoting the pan. Let heat briefly, then bake in the oven for about 15 minutes. While still hot, cut into pieces and serve sprinkled with parsley.
