Mushrooms, with their content of B vitamins, including folic acid, ensure a good memory and strong nerves. Good sleep and a balanced mood are also important. The vitamin A from the spring onions improves vision, especially in the dark.

For the vegetarian alternative, the turkey cold cuts can be replaced by other vegetables. How about red peppers? The tortellini should also have a vegetarian filling. 120 grams ham
2 scallions
2 Tbsps olive oil
2 packets Tortellini (each 400 grams, refrigerated)
salt
250 milliliters Whipped cream
50 grams Crème fraiche
75 grams grated Cheese (such as emmental, mozzarella)
2 eggs
freshly ground peppers
freshly grated Nutmeg
30 grams grated Parmesan
2 Tbsps breadcrumbs

Preparation steps

Preheat oven to 180°C (approximately 350°F).

Wipe mushrooms with a damp towel and cut into slices. Cut ham into small cubes. Rinse, trim and cut scallions into thin rings. Fry together in hot oil for 1-2 minutes. Cook tortellini in boiling salted water for about 2 minutes (according to instructions). Then rinse and leave to drain. Put everything into a baking dish.

Combine heavy cream with creme fraiche, grated cheese and eggs, season with salt, pepper and nutmeg and spread over the pasta. Mix parmesan with breadcrumbs and sprinkle over top. Bake in oven until golden brown for about 25 minutes.

Sprinkle with scallions and serve.
