400 grams Rigatoni
salt
250 grams cooked ham
3 scallions
70 grams sundried Tomatoes (in oil)
1 garlic clove
30 grams toasted Pine nuts
120 milliliters olive oil
30 grams freshly grated Parmesan
freshly ground peppers
75 milliliters Whipped cream
1 tsp freshly chopped oregano
freshly grated Parmesan (to sprinkle)

Preparation steps

1.

Cook the rigatoni in boiling salted water until al dente. Cut the ham into 1 cm (approximately 1/2 inch) cubes. Rinse and trim the scallions. Slice thinly and blanch in boiling salted water. Transfer to an ice water bath, then drain well.

Drain the tomatoes, reserving the oil. Blend the tomatoes with the peeld garlic, pine nuts, and olive oil to form a creamy pesto. Mix in the parmesan cheese, and season to taste with salt and pepper.

Heat 1 tablespoon of oil and sauté the ham. Drain the pasta, add to the ham, and stir in 3-4 tablespoons of the tomato pesto.

Mix in the cream, and toss everything to combine. Add the oregano, and season to taste with salt and pepper. Divide onto plates, and garnish with the scallions and parmesan.
