Preparation steps

1.

Toast pine nuts in a dry pan until golden-brown. Peel and coarsely chop garlic.

Rinse parsley and shake dry. Set a few leaves aside for garnish. Combine remaining parsley, pine nuts, garlic, 1 teaspoon salt and about half of the oil in a mortar and pestle or blender. Finely grind or puree. Gradually, stir remaining oil and cheese into mixture. Season generously with salt and pepper.

Rinse, core and slice tomatoes. Lay tomatoes on a serving plate or divide among individual plates. Sprinkle tomatoes with salt and freshly ground pepper.

Spoon parsley pesto over tomatoes. Remove pits from olives if desired and sprinkle on tomatoes. Garnish with reserved parsley leaves and serve immediately.
